  • 2 cups cooked white or brown rice
  • 2 cups shredded Mexican-blend cheese
  • 0.25 cup fresh cilantro, chopped (optional, for garnish)

Directions

Step 1

Preheat your oven to 375°F (190°C).

In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Add the diced onion and sauté for 2-3 minutes until softened.
