  • 2 tablespoons Olive oil

  • 1 cup Black beans (cooked or canned, rinsed and drained)
  • 1 cup Corn kernels (canned, fresh, or frozen)
  • 1 piece Red bell pepper, diced
  • 1 teaspoon Ground cumin
  • 1 teaspoon Chili powder
  • 0.5 teaspoon Garlic powder
  • 1 cup Shredded cheddar cheese
  • 0.5 cup Sour cream
  • 2 tablespoons Green onions, sliced
  • 2 tablespoons Cilantro, chopped (optional)

Directions

Step 1

Preheat your oven to 400°F (200°C).

Step 2

Wash and scrub the potatoes thoroughly to remove any dirt. Pat them dry with a clean towel. Poke each potato a few times with a fork to create small holes for steam to escape during baking.

Rub each potato with olive oil and sprinkle with salt. Place them directly on the oven rack or on a baking sheet and bake for 50–60 minutes, or until the skins are crispy and a fork easily pierces the flesh.
