  • 2 peppers chipotle peppers in adobo sauce, minced
  • 2 tablespoons adobo sauce from chipotle peppers
  • 1 15-ounce can tomato sauce
  • 1 tablespoon brown sugar
  • 1.5 teaspoons cumin powder
  • 1.5 teaspoons smoked paprika
  • 1 teaspoon chili powder
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.5 cup shredded cheddar cheese (optional for topping)
  • 2 tablespoons chopped fresh cilantro (optional for garnish)

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

In a large skillet over medium heat, cook the chopped bacon until crispy. Use a slotted spoon to transfer the bacon to a plate lined with paper towels. Leave about 2 tablespoons of bacon fat in the skillet.

Add the diced onion and bell pepper to the skillet with the bacon fat. Sauté for 5 minutes or until softened.
