Ingredients

  • 16 oz Cream cheese
  • 8 oz Shredded Monterey Jack cheese
  • 8 oz Shredded sharp Cheddar cheese
  • 1 cup Sour cream
  • 4 oz Canned diced green chilies (drained)
  • 2.25 oz Canned sliced ripe olives (drained)
  • 1 packet Taco seasoning mix
  • 3 pcs Large eggs
  • 1 cup Panko breadcrumbs
  • 4 tbsp Unsalted butter (melted)
  • 2 tbsp Fresh cilantro (chopped, optional for garnish)
  • 1 cup Diced tomatoes (optional for garnish)
  • 0 Tortilla chips (for serving)

Directions

Step 1

Preheat your oven to 325°F (165°C) and grease a 9-inch springform pan.

Step 2

In a medium bowl, mix the panko breadcrumbs and melted butter until evenly combined. Press this mixture firmly into the bottom of the prepared springform pan to form the crust. Set aside.

Step 3

In a large mixing bowl, use an electric mixer to beat the cream cheese until smooth and creamy.

Step 4

Add the shredded Monterey Jack cheese, shredded Cheddar cheese, and sour cream to the cream cheese mixture. Beat until well combined.

Step 5

Stir in the diced green chilies, sliced ripe olives, and taco seasoning mix until evenly distributed.

Beat in the eggs, one at a time, mixing well after each addition.

Pour the cheese filling over the prepared crust, smoothing the top with a spatula.

Place the springform pan on the middle rack of the preheated oven and bake for 45–50 minutes, or until the center is set and firm to the touch.

Remove the cheesecake from the oven and let it cool to room temperature. Then, refrigerate for at least 2 hours to firm up before serving.

Before serving, run a knife around the edge of the cheesecake and carefully remove the sides of the springform pan.
