Ingredients

  • 4 medium zucchini
  • 2 cups cherry tomatoes
  • 6 slices bacon
  • 1 medium yellow onion
  • 2 cloves garlic
  • 1 tablespoon olive oil
  • 1 teaspoon paprika
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 2 tablespoons fresh parsley

Directions

Step 1

Wash and dry the zucchini and cherry tomatoes. Dice the zucchini into bite-sized chunks and halve the cherry tomatoes. Set aside.

Step 2

Peel and finely dice the yellow onion. Mince the garlic cloves. Chop the fresh parsley for garnish and set it aside.

Step 3

In a large skillet, cook the bacon slices over medium heat until crispy. Remove the bacon from the pan and place it on a plate lined with paper towels to drain. Reserve about 1 tablespoon of the bacon grease in the skillet.
