Ingredients

  • 400 grams Fresh strawberries
  • 80 grams Granulated sugar
  • 1 tablespoon Lemon juice
  • 2 teaspoons Unflavored gelatin
  • 250 milliliters Heavy cream
  • 1 teaspoon Vanilla extract
  • 3 tablespoons Cold water
  • 6 leaves Fresh mint leaves (optional, for garnish)

Directions

Step 1

Rinse the strawberries under cold water, then hull and slice them.

Step 2

In a medium saucepan over medium heat, combine the strawberries, granulated sugar, and lemon juice. Cook for 5-7 minutes or until the strawberries release their juices and become soft. Remove from heat and let cool slightly.

Step 3

Using a blender or food processor, puree the cooked strawberries until smooth. Pass the puree through a fine-mesh sieve to remove seeds. Set the sieved puree aside to cool to room temperature.

Step 4

In a small bowl, sprinkle the unflavored gelatin over cold water and let it bloom for 5 minutes. Once bloomed, microwave the mixture for 10-15 seconds to dissolve the gelatin completely. Stir well to ensure there are no lumps.
