Ingredients

  • 1 cup stone-ground grits
  • 4 cups water
  • 1 cup whole milk
  • 4 tablespoons unsalted butter
  • 1 cup sharp cheddar cheese, shredded
  • 1.5 teaspoons salt
  • 0.5 teaspoons black pepper
  • 1 pound extra-large shrimp, peeled and deveined
  • 1 teaspoon paprika
  • 0.25 teaspoons cayenne pepper
  • 1 tablespoon olive oil
  • 4 slices bacon, chopped
  • 2 cloves garlic cloves, minced
  • 0.5 cup chicken stock
  • 1 tablespoon lemon juice, freshly squeezed
  • 2 stalks green onions, chopped
  • 2 tablespoons parsley, chopped (optional)

Directions

Step 1

In a medium saucepan, bring water and 1 teaspoon of salt to a boil. Gradually whisk in the grits.

Step 2

Reduce the heat to low and simmer, stirring occasionally, for about 20 minutes, or until the grits are tender and thickened.

Stir in milk, 2 tablespoons of butter, shredded cheddar cheese, and black pepper. Adjust seasoning with more salt if needed. Keep warm on low heat.

Pat the shrimp dry with paper towels and season with paprika, cayenne pepper, and a pinch of salt.
