Ingredients

  • 4 large russet potatoes
  • 4 tablespoons unsalted butter
  • 0.5 cups whole milk
  • 2 teaspoons salt
  • 1 teaspoon ground black pepper
  • 2 tablespoons olive oil
  • 1 medium, diced yellow onion
  • 1 medium, diced green bell pepper
  • 2 diced celery stalks
  • 3 minced garlic cloves
  • 1 pound ground beef
  • 1 teaspoon smoked paprika
  • 2 tablespoons Worcestershire sauce
  • 2 tablespoons all-purpose flour
  • 1 cup beef broth
  • 1 cup frozen corn
  • 1 cup frozen green beans
  • 1 cup shredded cheddar cheese

Directions

Step 1

Peel and dice the russet potatoes, then add them to a large pot of salted water. Bring to a boil and cook until fork-tender, about 15 minutes.

Step 2

Drain the potatoes and return them to the pot. Mash them with unsalted butter, whole milk, 1 teaspoon of salt, and 1/2 teaspoon of black pepper until smooth. Set aside.

Step 3

Preheat your oven to 400°F (200°C).

Step 4

Heat olive oil in a large skillet over medium heat. Add the diced yellow onion, green bell pepper, and celery. Sauté for 5 minutes until softened.

Step 5

Stir in the minced garlic and cook for an additional minute.

Step 6

Add the ground beef to the skillet. Cook until browned, breaking it apart with a wooden spoon, about 7-8 minutes. Drain any excess grease.

Step 7

Season the beef mixture with smoked paprika, 1 teaspoon of salt, and 1/2 teaspoon of black pepper. Stir in Worcestershire sauce and cook for 1 minute.

Step 8

Sprinkle the all-purpose flour over the beef mixture and stir well. Cook for 1-2 minutes to remove the raw flour taste.

Step 9

Gradually pour in the beef broth, stirring constantly to create a thick gravy. Simmer for 2-3 minutes, then stir in the frozen corn and green beans.

Step 10

Transfer the beef and vegetable mixture to a 9x13-inch baking dish. Spread it out into an even layer.

Step 11

Spread the mashed potatoes evenly over the beef mixture, making sure to seal the edges to prevent bubbling.

Step 12

Sprinkle the shredded cheddar cheese evenly over the mashed potatoes.

Step 13

Bake in the preheated oven for 20 minutes, or until the cheese is melted and bubbly. For a golden crust, broil on high for 2-3 minutes (optional).

Step 14

Let the Southern Shepherd's Pie cool for 5 minutes before serving. Enjoy!
