Ingredients

  • 4 large sweet potatoes
  • 0.5 cup unsalted butter (softened, divided)
  • 0.5 cup granulated sugar
  • 0.5 cup brown sugar
  • 0.25 cup milk
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 0.5 teaspoon kosher salt
  • 0.5 cup all-purpose flour
  • 1.5 cups chopped pecans
  • 2 tablespoons corn syrup (light)
  • 1 teaspoon cinnamon

Directions

Step 1

Preheat your oven to 375°F (190°C) and lightly grease a 9x13-inch baking dish.

Step 2

Peel and cube the sweet potatoes. Boil them in a large pot of water until tender, about 15-20 minutes. Drain the potatoes and transfer them to a large mixing bowl.

Step 3

Mash the sweet potatoes until smooth, then add 0.25 cup of softened butter, granulated sugar, milk, eggs, vanilla extract, and kosher salt. Mix until well combined.

Step 4

Spread the sweet potato mixture evenly into the prepared baking dish and smooth out the top with a spatula.

Step 5

In a medium mixing bowl, prepare the praline topping by combining brown sugar, 0.25 cup of softened butter, all-purpose flour, chopped pecans, corn syrup, and cinnamon. Stir until the mixture forms a crumbly texture.

Step 6

Sprinkle the praline mixture evenly over the sweet potatoes in the baking dish.

Step 7

Bake in the preheated oven for 35 minutes, or until the topping is bubbling and golden brown.

Step 8

Remove from the oven and let the casserole cool for 5-10 minutes before serving. Serve warm and enjoy!
