Ingredients

  • 2 pounds Pork tenderloin
  • 3 tablespoons Olive oil
  • 4 cloves Fresh garlic, minced
  • 2 teaspoons Paprika
  • 0.5 teaspoons Cayenne pepper
  • 1 teaspoon Onion powder
  • 1 tablespoon Brown sugar
  • 1 teaspoon Salt
  • 0.5 teaspoons Black pepper
  • 2 tablespoons Fresh lemon juice
  • 2 Red bell peppers, cut into 1-inch pieces
  • 2 Green bell peppers, cut into 1-inch pieces
  • 2 Red onions, cut into wedges
  • 1 cup Pineapple chunks (optional)
  • 12 Wooden or metal skewers

Directions

Step 1

Cut the pork tenderloin into 1-inch cubes and set aside.

Step 2

In a large bowl, whisk together olive oil, minced garlic, paprika, cayenne pepper, onion powder, brown sugar, salt, black pepper, and fresh lemon juice to create the marinade.

Step 3

Add the pork cubes to the marinade and toss to coat evenly. Cover the bowl and let the pork marinate in the refrigerator for at least 1 hour (or up to 8 hours for maximum flavor).

Step 4

If using wooden skewers, soak them in water for at least 30 minutes to prevent burning on the grill.

Step 5

Preheat your grill to medium-high heat (around 375°F to 400°F).

Step 6

Assemble the kabobs by threading the marinated pork cubes, bell peppers, red onions, and optional pineapple chunks onto the skewers, alternating ingredients to ensure a varied and colorful presentation.

Step 7

Place the kabobs on the preheated grill. Cook for 12–15 minutes, turning occasionally, until the pork is cooked through and reaches an internal temperature of 145°F (63°C).

Step 8

Remove the kabobs from the grill and let them rest for 5 minutes before serving.

Step 9

Serve hot and enjoy your flavorful Southern Pork Kabobs!
