  • 2 cups dried Southern peas (field peas, black-eyed peas, or crowder peas)
  • 1 large ham hock or diced smoked ham
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 2 cups water
  • 1 piece bay leaf
  • 1 teaspoon salt
  • 0.5 teaspoon ground black pepper
  • 1 teaspoon hot sauce (optional)
  • 2 tablespoons chopped fresh parsley (for garnish)

Directions

Step 1

Rinse and sort through the dried peas to remove any debris or bad peas. Place the peas in a large bowl and cover with water to soak overnight, or use the quick soak method by boiling them for 2 minutes, then letting them sit for 1 hour.

Drain the peas and set them aside.

In a large pot or Dutch oven, heat a tablespoon of oil over medium heat. Add the diced onion and cook until translucent, about 5 minutes.
