Ingredients

  • 2 tablespoons olive oil
  • 1 medium yellow onion, diced
  • 2 stalks celery, diced
  • 2 medium carrots, diced
  • 4 cloves garlic, minced
  • 1 piece smoked ham hock or smoked turkey leg
  • 8 cups chicken broth, low sodium
  • 1 pound black-eyed peas, dried
  • 4 cups collard greens, chopped
  • 14.5 ounces diced tomatoes, canned
  • 1 teaspoon smoked paprika
  • 1 teaspoon thyme, dried
  • 1 leaf bay leaf
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 0.5 teaspoon hot sauce (optional)
  • 2 stalks green onions, sliced for garnish

Directions

Step 1

Rinse the dried black-eyed peas under cold water and pick through them to remove any debris. Set aside.

Step 2

In a large soup pot or Dutch oven, heat the olive oil over medium heat.

Step 3

Add the diced onion, celery, and carrots. Sauté for 5-7 minutes until the vegetables start to soften.

Step 4

Stir in the minced garlic and cook for 1 minute, until fragrant.

Step 5

Place the smoked ham hock or turkey leg into the pot and pour in the chicken broth.

Step 6

Add the rinsed black-eyed peas, diced tomatoes, smoked paprika, thyme, bay leaf, salt, and black pepper. Stir to combine.

Step 7

Bring the soup to a boil over high heat, then reduce to a simmer. Cover and let cook gently for about 1 hour.

Step 8

After 1 hour, stir in the chopped collard greens. Continue simmering for another 30-45 minutes until the black-eyed peas and greens are tender.

Step 9

Remove the smoked ham hock or turkey leg from the pot. Shred the meat off the bone, discarding the bone, and return the meat to the soup.

Step 10

Taste and adjust the seasoning with more salt, pepper, or a splash of hot sauce if desired.

Step 11

Ladle the soup into bowls and garnish with sliced green onions before serving.
