Ingredients

  • 2 pounds ground beef
  • 1 medium onion, finely chopped
  • 1 medium green bell pepper, finely chopped
  • 3 cloves minced garlic
  • 1 cup breadcrumbs
  • 0.5 cup whole milk
  • 2 pieces large eggs
  • 0.5 cup ketchup
  • 2 tablespoons Worcestershire sauce
  • 1 tablespoon Dijon mustard
  • 1 teaspoon smoked paprika
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons brown sugar (for the glaze)
  • 0.5 cup ketchup (for the glaze)
  • 1 teaspoon apple cider vinegar (for the glaze)

Directions

Step 1

Preheat your oven to 375°F (190°C). Lightly grease a 9x5-inch loaf pan or line it with parchment paper for easy removal.

Step 2

In a large mixing bowl, combine the ground beef, finely chopped onion, green bell pepper, minced garlic, breadcrumbs, milk, eggs, ketchup, Worcestershire sauce, Dijon mustard, smoked paprika, salt, and black pepper.

Step 3

Using clean hands or a wooden spoon, mix everything together until well combined, making sure not to overmix, as this can make the meatloaf dense.

Step 4

Transfer the meat mixture into the prepared loaf pan. Press it down gently to ensure it’s evenly packed.

Step 5

In a small bowl, whisk together the brown sugar, ketchup, and apple cider vinegar to create the glaze.

Step 6

Spread the glaze evenly over the top of the meatloaf using the back of a spoon or a silicone spatula.

Step 7

Place the loaf pan in the preheated oven and bake for 55–60 minutes, or until the meatloaf reaches an internal temperature of 160°F (71°C).

Step 8

Once cooked, remove the meatloaf from the oven and let it rest for 10 minutes before slicing. This allows the juices to redistribute and makes slicing easier.

Step 9

Serve the meatloaf warm with your favorite side dishes, such as mashed potatoes, green beans, or cornbread.
