Ingredients

  • 4 pieces Boneless, skinless chicken breasts
  • 0.5 cups All-purpose flour
  • 1 teaspoons Salt
  • 0.5 teaspoons Black pepper
  • 2 tablespoons Unsalted butter
  • 2 tablespoons Olive oil
  • 1 cups Chicken broth
  • 0.5 cups Dry white wine
  • 0.25 cups Lemon juice
  • 2 tablespoons Capers, drained
  • 2 tablespoons Fresh parsley, chopped
  • 4 pieces Lemon slices (optional, for garnish)

Directions

Step 1

Place chicken breasts between two pieces of plastic wrap or parchment paper. Using a meat mallet or rolling pin, pound the chicken to an even thickness, about 1/2 inch thick.

Step 2

In a shallow dish, combine the flour, salt, and pepper. Dredge each chicken breast in the flour mixture, shaking off any excess.

Step 3

In a large skillet, heat 1 tablespoon of butter and 2 tablespoons of olive oil over medium heat. Add the chicken breasts to the skillet and cook for 4-5 minutes per side, or until golden brown and fully cooked through (internal temperature should reach 165°F).
