Rinse the dried lima beans thoroughly and pick out any debris. Place them in a large bowl, cover with cold water, and soak overnight (or at least 8 hours). Drain and rinse the beans before cooking.
In a large Dutch oven or heavy-bottomed pot, melt the unsalted butter over medium heat.
Add the diced ham and cook for 4-5 minutes until slightly browned, stirring occasionally.
Stir in the chopped onion and cook for 3-4 minutes, or until the onions are soft and translucent.
Add the minced garlic and sauté for another minute, being careful not to let it burn.
Pour in the chicken broth and stir in the smoked paprika, black pepper, and the bay leaf.
Add the drained lima beans to the pot and bring the mixture to a boil over medium-high heat.
