  • 6 cups water
  • 6 slices bacon

  • 0.5 teaspoon smoked paprika (optional)

Directions

Step 1

Rinse the dried lima beans thoroughly under cold water and remove any debris. Place the beans in a large bowl, cover them with water, and let them soak overnight. Alternatively, use the quick soak method by boiling the beans in water for 2 minutes, then removing them from heat and letting them sit for 1 hour.

After soaking, drain and rinse the beans under cold water again, then set aside.

In a large pot or Dutch oven, cook the bacon slices over medium heat until crispy. Remove the bacon and place it on a paper towel to cool. Reserve about 2 tablespoons of bacon drippings in the pot.
