Ingredients

  • 3 cups All-purpose flour
  • 1 tablespoon Baking powder
  • 0.5 teaspoon Salt
  • 1 cup Unsalted butter, softened
  • 2 cups Granulated sugar
  • 4 large Eggs
  • 2 teaspoons Pure vanilla extract
  • 1.25 cups Whole milk
  • 1 cup Sweetened shredded coconut
  • 8 ounces Cream cheese, softened
  • 0.5 cup Unsalted butter, softened (for frosting)
  • 4 cups Powdered sugar
  • 2 tablespoons Heavy cream
  • 1 cup Sweetened shredded coconut (for topping)

Directions

Step 1

Preheat your oven to 350°F (175°C). Grease and flour three 9-inch round cake pans and set them aside.

Step 2

In a medium bowl, whisk together the all-purpose flour, baking powder, and salt. Set aside.

Step 3

In a large bowl, use a hand or stand mixer to cream the softened butter and granulated sugar together on medium speed until light and fluffy, about 3 minutes.

Step 4

Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.

Step 5

With the mixer on low speed, alternately add the flour mixture and the milk to the wet ingredients in three additions, starting and ending with the flour mixture. Mix until just combined.

Step 6

Fold the sweetened shredded coconut into the batter gently with a spatula.

Step 7

Divide the batter evenly between the three prepared cake pans. Smooth the tops with a spatula.

Step 8

Bake in the preheated oven for 22-25 minutes, or until a toothpick inserted into the centers comes out clean.

Step 9

Allow the cakes to cool in their pans for 10 minutes, then turn them out onto wire racks to cool completely.

Step 10

While the cakes cool, prepare the frosting. In a large bowl, beat the softened cream cheese and butter together on medium speed until smooth and creamy, about 2 minutes.

Step 11

Gradually add the powdered sugar, one cup at a time, mixing on low speed until fully incorporated. Stir in the heavy cream and beat on high speed for 2 minutes until frosting is light and fluffy.

Step 12

To assemble the cake, place one cake layer on a serving plate. Spread a generous layer of cream cheese frosting over the top. Add the second layer of cake and repeat. Place the third layer on top and frost the top and sides of the cake evenly.

Step 13

Sprinkle the sweetened shredded coconut over the top of the cake and press lightly on the sides to adhere.

Step 14

Chill the cake in the refrigerator for at least 30 minutes before serving to let the frosting set.

Step 15

Slice and serve your beautiful Southern Lady Cake. Enjoy!
