Ingredients

  • 1 pound Boneless, skinless chicken thighs
  • 1 medium head Green cabbage
  • 1 large Yellow onion
  • 3 pieces Garlic cloves
  • 2 medium Carrots
  • 2 stalks Celery stalks
  • 4 cups Chicken broth
  • 3 tablespoons Vegetable oil
  • 2 tablespoons Butter
  • 1 teaspoon Smoked paprika
  • 1 teaspoon Dried thyme
  • 0.5 teaspoons Red pepper flakes
  • 1 teaspoon Salt
  • 0.5 teaspoons Black pepper
  • 2 tablespoons Parsley (for garnish)

Directions

Step 1

Cut the cabbage into small wedges or bite-sized pieces. Thinly slice the onion, carrots, and celery. Mince the garlic.

Step 2

Dice the chicken thighs into bite-sized pieces. Season with half of the salt and black pepper.

Step 3

Heat 2 tablespoons of vegetable oil in a large pot or Dutch oven over medium-high heat. Add the chicken and sear on all sides until browned, about 6-8 minutes. Remove the chicken and set aside.

Step 4

In the same pot, add an additional tablespoon of vegetable oil and 2 tablespoons of butter. Once melted, add the cabbage. Fry, stirring frequently, until it’s starting to caramelize and has softened slightly, about 8-10 minutes.

Step 5

Push the cabbage to one side of the pot and add the onion, carrots, celery, and garlic to the other side. Cook until the vegetables are softened, about 5 minutes.

Stir everything together in the pot, then sprinkle smoked paprika, dried thyme, red pepper flakes, and the remaining salt and black pepper over the vegetables. Cook for another 1 minute to toast the spices.

Step 7

Return the browned chicken to the pot. Pour in the chicken broth, making sure to scrape up any browned bits stuck to the bottom of the pot.

Bring the mixture to a boil, then reduce the heat to low. Cover and simmer for 30 minutes, stirring occasionally.

Taste and adjust seasoning, if necessary. Sprinkle with chopped parsley for garnish before serving.
