Ingredients

  • 8 pieces large eggs
  • 0.5 cup mayonnaise
  • 2 tablespoons yellow mustard
  • 2 tablespoons sweet pickle relish
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 0.25 teaspoon paprika
  • 2 tablespoons green onion, finely chopped
  • 0.25 cup celery, finely diced

Directions

Step 1

Place the eggs in a single layer at the bottom of a medium saucepan. Fill the saucepan with enough water to cover the eggs by about 1 inch.

Step 2

Bring the water to a boil over medium-high heat. Once the water is boiling, cover the saucepan with a lid and turn off the heat. Let the eggs sit in the hot water for 10 minutes.

Step 3

Drain the hot water and immediately transfer the eggs to a bowl of ice water to cool for about 5 minutes. Once cooled, peel the eggs under running water.

Step 4

Chop the hard-boiled eggs into small pieces and place them in a medium-sized mixing bowl.

Step 5

Add the mayonnaise, yellow mustard, sweet pickle relish, salt, black pepper, and paprika to the bowl. Stir to combine evenly.

Step 6

Fold in the chopped green onion and diced celery for added crunch and flavor.

Step 7

Taste and adjust the seasoning if needed, adding more salt, pepper, or mustard to taste.

Step 8

Serve chilled on toast, in sandwiches, or as a side dish with crackers. Store leftovers in an airtight container in the refrigerator for up to 3 days.
