Ingredients

  • 2 pounds Ground beef (80/20 lean-to-fat ratio)
  • 2 large Eggs
  • 1 medium Yellow onion, finely chopped
  • 0.5 medium Green bell pepper, finely chopped
  • 1 cup Breadcrumbs
  • 0.5 cup Whole milk
  • 2 tablespoons Worcestershire sauce
  • 1 teaspoon Garlic powder
  • 1 teaspoon Paprika
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 0.5 cup Ketchup
  • 2 tablespoons Brown sugar
  • 1 teaspoon Apple cider vinegar
  • 1 as needed Cooking spray

Directions

Step 1

Spray the inside of your crock pot with cooking spray to prevent sticking.

Step 2

In a large mixing bowl, combine the ground beef, eggs, chopped onion, chopped green bell pepper, breadcrumbs, milk, Worcestershire sauce, garlic powder, paprika, salt, and black pepper. Mix until well combined, but avoid overmixing to keep the meatloaf tender.

Shape the meat mixture into a loaf and place it in the bottom of the crock pot.

In a small bowl, whisk together the ketchup, brown sugar, and apple cider vinegar to make the glaze.

Spread half of the glaze evenly over the top of the meatloaf.

Cover the crock pot with the lid and cook on LOW for 6-8 hours or on HIGH for 3-4 hours, or until the internal temperature of the meatloaf reaches 160°F (71°C).

About 30 minutes before the cooking time is complete, spread the remaining glaze over the meatloaf and re-cover the crock pot.

Carefully remove the meatloaf from the crock pot when done, using a wide spatula or tongs to prevent it from breaking apart (it's easier to slice once slightly cooled).
