Ingredients

  • 4 pieces (4-6 ounces each) Cubed beef steaks
  • 2 cups All-purpose flour
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 1 teaspoon Garlic powder
  • 1 teaspoon Paprika
  • 1.5 cups Buttermilk
  • 2 large Eggs
  • 1.5 cups Vegetable oil
  • 2 tablespoons Butter
  • 2 cups Milk
  • 0.5 teaspoon Salt (for gravy)
  • 1 teaspoon Black pepper (for gravy)

Directions

Step 1

Place the cubed beef steaks between two sheets of plastic wrap or parchment paper and gently pound them using a meat mallet until about 1/4 inch thick. Set aside.

Step 2

In a shallow dish, whisk together the all-purpose flour, 1 teaspoon salt, 1 teaspoon black pepper, garlic powder, and paprika.

Step 3

In another shallow dish or bowl, whisk together the buttermilk and eggs until well combined.

Step 4

Dredge each steak in the seasoned flour mixture, making sure to coat both sides. Then, dip it into the buttermilk mixture, allowing any excess to drip off. Finally, dredge the steak back into the flour mixture, pressing gently to ensure an even coating. Set the breaded steaks on a plate and repeat with the remaining steaks.

Step 5

Heat the vegetable oil in a large, heavy skillet over medium-high heat. The oil should be about 1/4 inch deep in the pan. Test the oil temperature by sprinkling a little flour into the oil—it should sizzle immediately.

Step 6

Carefully add the breaded steaks to the hot oil, working in batches if necessary to avoid overcrowding the pan. Fry each steak for about 3-4 minutes per side, or until golden brown and crispy. Transfer the cooked steaks to a paper towel-lined plate or a wire rack to drain excess oil.

Step 7

Carefully pour off most of the oil from the skillet, leaving about 2 tablespoons of oil in the pan along with any browned bits. Lower the heat to medium, then add the butter to the skillet.

Step 8

Once the butter has melted, whisk in 1/4 cup of the reserved seasoned flour (from the dredging mixture) and cook for 1-2 minutes, stirring constantly, to create a roux.

Step 9

Slowly whisk in the milk, a little at a time, to form a smooth gravy. Continue stirring until the gravy thickens, about 4-5 minutes.

Step 10

Season the gravy with 1/2 teaspoon salt and 1 teaspoon black pepper, or to taste.

Step 11

Serve the country fried steaks hot, smothered with the creamy gravy. Enjoy with classic southern sides like mashed potatoes or collard greens for a full meal.
