Ingredients

  • 1 cup yellow cornmeal
  • 0.5 cup all-purpose flour
  • 2 tablespoons granulated sugar
  • 1 teaspoon baking powder
  • 0.5 teaspoon salt
  • 1 cup buttermilk
  • 1 whole large egg
  • 2 tablespoons unsalted butter (melted)
  • 2 tablespoons vegetable oil or shortening

Directions

Step 1

Preheat your oven to 425°F (220°C). Place a cast-iron corn stick pan in the oven to heat while you prepare the batter.

Step 2

In a medium mixing bowl, whisk together the cornmeal, flour, sugar, baking powder, and salt until well combined.

Step 3

In a separate bowl, whisk together the buttermilk, egg, and melted butter.

Step 4

Slowly pour the wet ingredients into the dry ingredients, stirring just until the batter comes together. Do not overmix.

Step 5

Carefully remove the hot cast-iron corn stick pan from the oven using oven mitts. Add about 1/2 teaspoon of vegetable oil or shortening to each cavity of the pan to grease the molds, and return the pan to the oven for 2 minutes to heat the oil.

Step 6

Remove the pan from the oven once the oil is hot and carefully spoon or pour the batter into each corn stick cavity, filling them about 2/3 full.

Step 7

Bake in the preheated oven for 12-15 minutes, or until the corn sticks are golden brown and a toothpick inserted in the center comes out clean.

Step 8

Carefully remove the corn sticks from the pan (use a butter knife to gently loosen edges if needed) and let them cool slightly on a wire rack.

Step 9

Serve warm with butter or honey for a delightful Southern treat!
