Ingredients

  • 1 cup All-purpose flour
  • 0.5 cup Cornmeal
  • 1 tablespoon Sugar
  • 1.5 teaspoons Baking powder
  • 1 teaspoon Salt
  • 0.5 teaspoon Ground black pepper
  • 0.75 cup Milk
  • 1 unit Large egg
  • 2 tablespoons Butter, melted
  • 1.5 cups Fresh corn kernels (or canned, drained, or frozen, thawed)
  • 0.5 cup Vegetable oil (for frying)

Directions

Step 1

In a large mixing bowl, whisk together the all-purpose flour, cornmeal, sugar, baking powder, salt, and ground black pepper until well combined.

Step 2

In a separate bowl, beat the milk, egg, and melted butter until smooth.

Step 3

Add the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix.

Step 4

Fold in the fresh corn kernels gently until evenly distributed throughout the batter.

Step 5

Heat the vegetable oil in a large skillet or frying pan over medium heat. The oil should be about 350°F (175°C) for optimal frying.

Step 6

Using a tablespoon or small scoop, drop spoonfuls of the batter into the hot oil, making sure not to overcrowd the pan.

Step 7

Fry the fritters for 2-3 minutes on each side, or until they are golden brown and crispy.

Step 8

Remove the fritters from the oil and place them on a plate lined with paper towels to drain excess oil.

Step 9

Repeat with the remaining batter, adding more oil to the pan if necessary and reheating as needed.

Step 10

Serve the Southern Corn Fritters warm with your favorite dipping sauces or as a side to a main dish.
