Start by preparing your peaches: peel, pit, and chop them into small chunks. Measure out 6 cups of chopped peaches.
In a large pot, combine the chopped peaches, granulated sugar, lemon juice, ground cinnamon, ground ginger, and ground nutmeg. Mix well to coat the peaches evenly in the sugar and spices.
Place the pot over medium heat and bring the mixture to a gentle boil. Stir occasionally to prevent sticking and allow the sugar to dissolve.
Once the mixture begins to boil, lower the heat to a simmer and cook for about 20–25 minutes, stirring frequently. The peaches will start to break down and release their juices.
Using a potato masher or an immersion blender, carefully mash or blend the peaches to your preferred consistency. For a chunkier jam, mash lightly; for a smoother jam, blend more thoroughly.
Increase the heat back to medium and stir in the Southern Comfort whiskey. Allow the jam to simmer for another 5 minutes to let the alcohol cook off slightly, leaving behind the rich flavor.
Stir in the liquid pectin, ensuring it's well incorporated. Bring the jam to a rolling boil and cook for 1–2 minutes, stirring constantly.
Remove the pot from heat and skim off any foam that has risen to the surface using a spoon.
Carefully ladle the hot jam into sterilized jars, leaving about 1/4 inch of headspace at the top. Wipe the jar rims clean, place the lids on, and screw on the bands until fingertip-tight.
Process the jars in a boiling water bath for 10 minutes (adjusting for altitude if necessary). Remove the jars and let them cool completely on a towel or wire rack.
Check the seals before storing. Properly sealed jars can be stored in a cool, dark place for up to one year. Refrigerate after opening and enjoy!
