  • 2 pounds Chicken (bone-in or boneless)
  • 2 large Yellow onion
  • 6 pieces Garlic cloves
  • 1 inch piece Fresh ginger
  • 3 medium Tomatoes
  • 1 can (13.5 ounces) Coconut milk
  • 3 tablespoons Vegetable oil
  • 10 pieces Curry leaves (optional)
  • 0.5 teaspoons Turmeric powder
  • 1 teaspoons Ground coriander
  • 1 teaspoons Ground cumin
  • 1 teaspoons Paprika
  • 1 teaspoons Garam masala
  • 0.25 teaspoons Cayenne pepper (optional for heat)
  • 1 cup Chicken stock
  • 1 tablespoon Lime juice
  • 0.25 cup (chopped) Fresh cilantro
  • 1 teaspoon Salt
  • 0.5 teaspoons Black pepper

Directions

Step 1

Clean and cut the chicken into bite-sized pieces if not already done. Pat it dry and set aside.

Step 2

Finely chop the onions, mince the garlic, and grate the ginger. Puree the tomatoes in a blender or food processor and set aside.

Step 3

Heat the vegetable oil in a large pot or deep skillet over medium heat.

Add the curry leaves (if using) and sauté for 30 seconds until fragrant.

Add the chopped onions and sauté for about 6-8 minutes until golden brown.

Stir in the minced garlic and grated ginger. Cook for 1-2 minutes until aromatic.
