  • 0.25 cup Fresh cilantro, chopped
  • 1 Jalapeño, finely diced (optional)
  • 0.25 cup Olive oil
  • 3 tablespoons Apple cider vinegar
  • 1 tablespoon Honey
  • 1 clove Garlic, minced
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 0 Tortilla chips or crackers (for serving)

Directions

Step 1

In a large mixing bowl, combine the black-eyed peas, corn kernels, diced cherry tomatoes, red bell pepper, green bell pepper, red onion, cilantro, and jalapeño (if using).
