Ingredients

  • 1 medium head Green cabbage
  • 0.5 medium head Red cabbage
  • 1 medium-sized Sweet onion
  • 1 Red bell pepper
  • 1 Yellow bell pepper
  • 2 medium-sized Carrots
  • 0.25 cup Apple cider vinegar
  • 0.25 cup Olive oil
  • 2 tablespoons Honey
  • 1 teaspoon Dijon mustard
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoons, chopped Fresh parsley

Directions

Step 1

Remove the outer leaves from both the green and red cabbages. Core them and finely shred using a sharp knife or a mandoline slicer. Place the shredded cabbage into a large mixing bowl.
