  • 1 cup Navy beans
  • 0 Water for boiling
  • 0.5 cup Unsalted butter, melted
  • 1.5 cups Granulated sugar
  • 1 cup Evaporated milk
  • 4 Large eggs
  • 2 teaspoons Vanilla extract
  • 1 teaspoon Ground cinnamon
  • 0.5 teaspoon Ground nutmeg
  • 0.5 teaspoon Salt
  • 2 Unbaked 9-inch pie crusts

Directions

Step 1

Rinse the navy beans thoroughly. In a medium pot, add the beans and cover them with water. Bring to a boil over high heat.

Once boiling, reduce the heat to a simmer. Cook the beans for 45-60 minutes or until they are completely tender. Drain and let them cool slightly.

Preheat your oven to 350°F (175°C).

In a food processor, puree the cooked beans until smooth. If needed, add a tablespoon or so of evaporated milk to aid in pureeing.
