Ingredients

  • 4 pounds Bone-in chicken pieces (legs, thighs, or breast)
  • 2 teaspoons Salt
  • 1 teaspoon Ground black pepper
  • 1 teaspoon Paprika
  • 1 teaspoon Garlic powder
  • 1 teaspoon Onion powder
  • 2 tablespoons Olive oil
  • 1 cup Ketchup
  • 2 tablespoons Brown sugar
  • 2 tablespoons Apple cider vinegar
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon Dijon mustard
  • 1 teaspoon Smoked paprika
  • 2 tablespoons Water

Directions

Step 1

Preheat your grill, broiler, or oven to 375°F (190°C). If using a grill, heat to medium heat.

Step 2

Pat chicken pieces dry with paper towels and place them on a large plate or tray.

Step 3

Rub the chicken evenly with salt, black pepper, paprika, garlic powder, and onion powder. Drizzle with olive oil and massage the seasonings into the chicken.

Step 4

In a small saucepan over medium heat, combine the ketchup, brown sugar, apple cider vinegar, Worcestershire sauce, Dijon mustard, smoked paprika, and water. Stir well and bring to a gentle simmer. Cook for 5 minutes, then remove from heat. This will be your barbecue sauce.

Step 5

If grilling or broiling, lightly oil the grates and place the chicken skin-side down over direct heat. Cook for about 7-8 minutes or until lightly charred, then flip and cook another 7-8 minutes. Reduce the heat to low (or move the chicken to indirect heat) and brush with the barbecue sauce.

Step 6

If baking in the oven, place chicken on a lined or greased baking sheet. Bake uncovered for 35 minutes, then brush with barbecue sauce and bake for an additional 10 minutes.

Step 7

Continue brushing the chicken with the barbecue sauce every few minutes during the last phase of cooking, ensuring it has a glossy finish and rich coating.

Step 8

Use a meat thermometer to ensure the chicken reaches an internal temperature of 165°F (74°C). Remove from heat and rest for 5 minutes before serving.

Step 9

Serve hot with your favorite sides like coleslaw, cornbread, or grilled vegetables!
