  • 2 heads Romaine lettuce
  • 1 cup Sweet corn (canned or fresh)
  • 1 cup Black beans (canned, drained and rinsed)
  • 1 cup Cherry tomatoes
  • 1 medium Red bell pepper
  • 1 large Avocado
  • 0.5 medium Red onion
  • 0.25 cup Cilantro (fresh, chopped)
  • 3 tablespoons Lime juice (freshly squeezed)
  • 2 tablespoons Olive oil
  • 1 teaspoon Honey
  • 0.5 teaspoon Ground cumin
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper

Directions

Step 1

Rinse and pat dry the romaine lettuce. Chop into bite-sized pieces and place it in a large salad bowl.

If using fresh corn, boil or grill the corn until tender, then cut the kernels off the cob. If using canned corn, drain it thoroughly. Add the corn to the salad bowl.

Drain and rinse the black beans, then add them to the salad bowl.
