  • 15 ounces canned black beans, drained and rinsed
  • 1 cup frozen corn
  • 6 cups chicken broth
  • 2 tablespoons lime juice, freshly squeezed
  • 1 cup fresh cilantro, chopped
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 cup tortilla chips, for serving
  • 0.5 cup shredded cheddar cheese, for topping
  • 0.25 cup sour cream, for topping
  • 1 avocado, diced, for topping

Directions

Step 1

In a large pot or Dutch oven, heat the olive oil over medium heat.

Step 2

Add the diced onion, garlic, jalapeño, and red bell pepper. Sauté for 5 minutes, or until the vegetables are softened.
