  • 0.25 cup (chopped) Cilantro
  • 0.25 cup Olive oil
  • 3 tablespoons Red wine vinegar
  • 2 tablespoons (freshly squeezed) Lime juice
  • 1 tablespoon Honey
  • 2 cloves (minced) Garlic
  • 0.5 teaspoon Salt
  • 0.5 teaspoon Black pepper

Directions

Step 1

In a large mixing bowl, combine the drained and rinsed black beans, drained and rinsed black-eyed peas, corn kernels, cherry tomatoes, diced bell pepper, chopped red onion, diced jalapeño, and chopped cilantro.
