  • 4 whole bell peppers
  • 2 tablespoons olive oil
  • 1 medium, diced yellow onion
  • 3 minced garlic cloves
  • 1 pound lean ground turkey
  • 1 14.5-ounce can diced tomatoes
  • 1 cup cauliflower rice
  • 1 teaspoon Italian seasoning
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 1 cup shredded mozzarella cheese
  • 2 tablespoons chopped parsley

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Cut the tops off the bell peppers and remove the seeds and membranes. Set the peppers aside, and dice the edible tops of the peppers.

Step 3

Heat olive oil in a large skillet over medium heat. Add the diced onion, garlic, and the diced tops of the bell peppers. Sauté for 3-4 minutes until softened.

Add the ground turkey to the skillet and cook until browned, breaking it up with a wooden spoon, about 5-7 minutes.

Stir in the diced tomatoes (with their juice), cauliflower rice, Italian seasoning, salt, and black pepper. Cook for another 3-5 minutes until the mixture is well combined and heated through.
