Ingredients

  • 6 large Tomatoes
  • 1 large Cucumber
  • 1 medium Red bell pepper
  • 1 medium Green bell pepper
  • 1 small Red onion
  • 2 cloves Garlic
  • 3 tablespoons Extra virgin olive oil
  • 2 tablespoons Red wine vinegar
  • 2 cups Tomato juice
  • 2 tablespoons Fresh parsley
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 0.25 teaspoon Cayenne pepper (optional)
  • 1 tablespoon Lemon juice

Directions

Step 1

Wash all vegetables thoroughly under running water.

Step 2

Core the tomatoes, and chop them into large chunks. Peel the cucumber and cut it into large pieces. Remove the stems and seeds from the peppers, then roughly chop them. Peel and quarter the red onion. Peel the garlic cloves.

Step 3

In a blender or food processor, combine the tomatoes, cucumber, red bell pepper, green bell pepper, red onion, and garlic. Blend until smooth, or leave it slightly chunky if you prefer a more textured gazpacho.

Step 4

Add the extra virgin olive oil, red wine vinegar, tomato juice, fresh parsley, salt, black pepper, cayenne pepper (if using), and lemon juice to the blender. Blend again until all the ingredients are well incorporated.

Step 5

Taste and adjust the seasoning with additional salt, pepper, or vinegar, if desired.

Step 6

Pour the gazpacho into a large bowl or container. Cover and refrigerate for at least 2 hours to allow the flavors to meld and for the soup to chill thoroughly.
