Ingredients

  • 4 pieces boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.5 teaspoon garlic powder
  • 1 medium (sliced) onion
  • 1 cup (sliced) mushrooms
  • 1 cup reduced-fat shredded mozzarella cheese
  • 0.25 cup chicken broth
  • 2 tablespoons (chopped) fresh parsley

Directions

Step 1

Preheat a large non-stick skillet over medium heat and add the olive oil.

Step 2

Season the chicken breasts with salt, black pepper, and garlic powder on both sides.

Step 3

Brown the chicken breasts in the skillet for 4-5 minutes on each side until lightly golden. Remove the chicken and set aside.
