Ingredients

  • 1 large head Cauliflower
  • 2 tablespoons Olive oil
  • 1 pound Ground turkey or lean ground beef
  • 1 medium, diced Onion
  • 2 cloves, minced Garlic
  • 2 medium, diced Carrots
  • 2 stalks, diced Celery
  • 2 tablespoons Tomato paste
  • 1 cup Beef broth or chicken broth (low-sodium)
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon Salt
  • 0.5 teaspoons Black pepper
  • 2 tablespoons Parmesan cheese (optional)

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Cut the cauliflower into florets. Steam or boil it until it is very tender, about 10-15 minutes. Drain well and set aside to cool slightly.

Step 3

In a large skillet over medium heat, heat 1 tablespoon of olive oil. Add the diced onion, garlic, carrots, and celery. Sauté until the vegetables are softened, about 5 minutes.

Add the ground turkey or ground beef to the skillet with the vegetables. Cook until browned and no longer pink, breaking it into small pieces with a wooden spoon.

Stir in the tomato paste, beef broth, Worcestershire sauce, salt, and pepper. Simmer the mixture for 5-7 minutes until the sauce thickens slightly. Remove from heat.

Spread the meat and vegetable mixture evenly into the bottom of a casserole dish. Spread the cauliflower mash over the top, smoothing it with a spatula.
