  • 250 g Whole wheat flour
  • 250 g All-purpose white flour
  • 50 g Sunflower seeds
  • 50 g Pumpkin seeds
  • 20 g Sesame seeds
  • 15 g Chia seeds
  • 30 g Flaxseeds
  • 7 g Instant dry yeast
  • 30 g Honey
  • 300 ml Warm water
  • 100 ml Milk
  • 8 g Salt
  • 30 ml Olive oil
  • 1 Egg (optional, for egg wash)

Directions

Step 1

In a large mixing bowl, combine the whole wheat flour, all-purpose white flour, sunflower seeds, pumpkin seeds, sesame seeds, chia seeds, flaxseeds, and salt.

Step 2

In a separate bowl, mix the warm water, milk, honey, and instant dry yeast. Let this mixture sit for 5 minutes, or until frothy.

Step 3

Create a well in the center of the dry ingredients and pour in the yeast mixture along with the olive oil. Stir the ingredients together until a sticky dough forms.

Step 4

Transfer the dough onto a floured surface and knead for about 10 minutes until smooth and elastic. Alternatively, use a stand mixer with a dough hook attachment for 8 minutes.

Place the dough in a lightly greased bowl and cover with a damp cloth or plastic wrap. Allow it to rise in a warm place for 1 hour, or until doubled in size.
