  • 2 tablespoons Honey
  • 3 tablespoons Soy sauce
  • 1 teaspoon Paprika
  • 1 teaspoon Ground coriander
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoons Olive oil
  • 0.5 cup Chicken stock
  • 2 tablespoons Cilantro (chopped, for garnish)
  • 4 cups Cooked jasmine rice (optional, for serving)

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Zest one orange and set the zest aside. Juice all three oranges to yield approximately 1.5 cups of fresh orange juice.

Step 3

In a small bowl, whisk together the orange juice, orange zest, minced garlic, grated ginger, honey, soy sauce, paprika, ground coriander, salt, and black pepper.

Heat the olive oil in a large oven-safe skillet or Dutch oven over medium-high heat.

Bake uncovered for 25-30 minutes, or until the chicken reaches an internal temperature of 165°F (74°C) and the sauce is slightly thickened.

Remove the skillet from the oven and let the chicken rest for 5 minutes.

Sprinkle chopped cilantro over the chicken for garnish. Serve hot with cooked jasmine rice, if desired, and drizzle additional orange sauce over the rice and chicken.
