Ingredients

  • 300 grams All-purpose flour
  • 2 teaspoons Cinnamon
  • 1 teaspoon Baking powder
  • 1 teaspoon Baking soda
  • 0.5 teaspoons Salt
  • 2 large Eggs
  • 200 grams Granulated sugar
  • 60 grams Brown sugar
  • 120 grams Sourdough discard
  • 120 milliliters Vegetable oil
  • 2 teaspoons Vanilla extract
  • 250 grams Zucchini (grated)
  • 100 grams Chopped walnuts or pecans (optional)
  • 50 grams Chocolate chips (optional)

Directions

Step 1

Preheat your oven to 175°C (350°F). Grease a standard 9x5-inch loaf pan and line it with parchment paper if desired.

Step 2

In a medium mixing bowl, whisk together the all-purpose flour, cinnamon, baking powder, baking soda, and salt. Set aside.

Step 3

In a large mixing bowl, beat the eggs, granulated sugar, and brown sugar together until well combined and creamy.

Step 4

Add the sourdough discard, vegetable oil, and vanilla extract to the wet ingredients. Mix until fully incorporated.

Step 5

Fold the grated zucchini into the wet mixture until evenly distributed.

Step 6

Gradually add the dry ingredients to the wet ingredients, stirring gently until just combined. Avoid overmixing, as this can result in a dense bread.

Step 7

If using, fold in the chopped nuts and chocolate chips for added texture and flavor.

Step 8

Pour the batter into the prepared loaf pan and smooth out the top with a spatula.

Step 9

Bake in the preheated oven for 55-60 minutes, or until a toothpick inserted into the center comes out clean.

Step 10

Once baked, let the zucchini bread cool in the pan for about 10 minutes. Then, carefully transfer it to a wire rack to cool completely before slicing.

Step 11

Store the bread in an airtight container at room temperature for up to 3 days, or freeze for longer storage.
