  • 4 slices sourdough bread
  • 4 slices bacon
  • 2 large eggs
  • 1 ripe avocado
  • 2 tablespoons butter
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 1 teaspoon lemon juice
  • 2 slices cheddar cheese
  • 2 tablespoons mayonnaise
  • 1 cup baby spinach

Directions

Step 1

Preheat a skillet over medium heat. Cook the bacon slices until crispy, about 4-5 minutes per side. Once cooked, transfer to a plate lined with paper towels to drain the excess grease.

Step 2

While the bacon cooks, slice the avocado in half, remove the pit, and scoop the flesh into a small bowl. Mash the avocado with a fork and mix in lemon juice, salt, and black pepper. Set aside.

Step 3

In the same skillet, melt 1 tablespoon of butter over medium heat. Crack the eggs into the skillet and cook sunny-side up or to your preferred doneness, about 2-3 minutes. Sprinkle with a pinch of salt and pepper. Remove the eggs and set aside.

Spread mayonnaise on one side of each slice of sourdough bread. Melt the remaining tablespoon of butter in the skillet and toast the bread slices until golden and crisp, about 2 minutes per side.
