  • 250 ml warm water
  • 500 grams all-purpose flour
  • 10 grams salt
  • 15 grams sugar
  • 50 grams unsalted butter, softened

Directions

Step 1

In a large mixing bowl, combine the active sourdough starter with warm water and stir until well mixed.

Add the all-purpose flour and stir until a rough dough forms.

Cover the bowl with a clean kitchen towel and let it rest for 30 minutes to allow the flour to absorb the water in a process called autolysis.

After the rest period, sprinkle the salt and sugar over the dough. Gently incorporate using a folding method or knead it by hand for about 5-7 minutes until the dough becomes smoother.

Add the softened butter and incorporate it fully into the dough. This may take a few minutes of kneading.

Transfer the dough to a lightly oiled bowl, cover with a damp cloth or plastic wrap, and let it rise at room temperature for about 4-6 hours, or until it has nearly doubled in size.
