  • 240 g Sourdough starter discard
  • 120 g All-purpose flour
  • 60 g Butter, softened
  • 1 tsp Salt
  • 1 tsp Dried herbs (optional, like rosemary or thyme)
  • 1 tbsp Olive oil
  • 0 for sprinkling Sea salt or flaky salt

Directions

Step 1

Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.

Step 2

In a large bowl, combine the sourdough starter discard, all-purpose flour, softened butter, and salt. If using, add the dried herbs. Mix the ingredients until they are well combined and form a smooth dough.

Step 3

Lightly flour your work surface and roll out the dough to a thin sheet, about 1/16 inch thick. Use a pizza cutter or a sharp knife to cut the dough into small rectangles or squares, about 1x2 inches.

Step 4

Transfer the cut-out crackers onto the prepared baking sheets. They can be close together as they won't expand much during baking.

Step 5

Brush the crackers lightly with olive oil using a pastry brush. Sprinkle with sea salt or flaky salt to taste.

Bake in the preheated oven for 15-20 minutes, or until the edges of the crackers are golden brown and crisp.
