Ingredients

  • 120 g All-purpose flour
  • 240 ml Sourdough discard
  • 60 ml Milk
  • 1 Egg
  • 240 g Fresh corn kernels
  • 1 tsp Baking powder
  • 0.5 tsp Salt
  • 1 tbsp Sugar
  • 0.25 tsp Ground black pepper
  • 2 tbsp Chopped chives or green onions
  • 120 ml Vegetable oil (for frying)

Directions

Step 1

In a large mixing bowl, whisk together the sourdough discard, milk, and egg until well combined.

Step 2

Add the all-purpose flour, baking powder, salt, sugar, and ground black pepper to the wet ingredients. Mix until just combined, being careful not to overmix.

Step 3

Fold in the fresh corn kernels and chopped chives (or green onions) gently into the batter.

Heat a large skillet over medium heat and add enough vegetable oil to generously coat the bottom of the pan.
