Ingredients

  • 240 ml Sourdough starter (discard or active)
  • 120 ml Whole milk
  • 60 g Unsalted butter, melted and cooled
  • 2 Large eggs
  • 2 tsp Vanilla extract
  • 120 g All-purpose flour
  • 25 g Cocoa powder
  • 30 g Malted milk powder
  • 50 g Granulated sugar
  • 1.5 tsp Baking powder
  • 0.5 tsp Baking soda
  • 0.5 tsp Salt
  • 100 g Dark chocolate chips
  • 0 Powdered sugar (for dusting, optional)
  • 0 Whipped cream or ice cream (for serving, optional)

Directions

Step 1

In a large mixing bowl, combine the sourdough starter, milk, melted butter, eggs, and vanilla extract. Whisk until smooth and well incorporated.

Step 2

In another bowl, sift together the all-purpose flour, cocoa powder, malted milk powder, sugar, baking powder, baking soda, and salt.

Step 3

Gradually stir the dry ingredients into the wet ingredients using a whisk or spatula, mixing until just combined. Be careful not to overmix; a few lumps are fine.

Step 4

Gently fold in the dark chocolate chips for pockets of melted chocolate in the waffles.

Step 5

Preheat a waffle iron according to the manufacturer's instructions. Lightly grease the waffle iron with non-stick cooking spray or butter, if needed.

Step 6

Pour an appropriate amount of batter into the preheated waffle iron (approximately 1/2 cup for standard waffle irons) and close the lid. Cook until the waffle is crispy on the outside and fully cooked inside, following the waffle iron's timing guidelines.

Step 7

Carefully remove the waffle and repeat the process with the remaining batter.

Step 8

Serve the waffles warm, dusted with powdered sugar and topped with whipped cream or ice cream, if desired.
