  • 2 teaspoons Baking powder
  • 0.5 teaspoons Baking soda
  • 6 tablespoons Unsalted butter (cold, cubed)
  • 1 cup Sourdough starter (discard or active, unfed)
  • 0.25 cup Whole milk (cold)

Directions

Step 1

Preheat your oven to 450°F (232°C) and line a baking sheet with parchment paper.

Step 2

In a large mixing bowl, whisk together the flour, salt, baking powder, and baking soda.

Step 3

Add the cold, cubed butter to the dry ingredients. Using a pastry cutter or your fingertips, cut in the butter until the mixture resembles coarse crumbs.

Step 4

Stir in the sourdough starter and cold milk. Mix just until a soft dough forms, being careful not to overwork it.

Step 5

Turn the dough onto a lightly floured surface and gently pat it out to about 1-inch thickness. Be careful not to compress the dough too much.

Use a round biscuit cutter or the rim of a glass to cut out biscuits. Re-roll any scraps and cut additional biscuits until all the dough is used.
