Ingredients

  • 240 grams all-purpose flour
  • 2 teaspoons baking powder
  • 0.5 teaspoon baking soda
  • 0.5 teaspoon salt
  • 1 tablespoon granulated sugar
  • 100 grams cooked bacon, crumbled
  • 120 grams shredded sharp cheddar cheese
  • 200 grams sourdough starter discard (unfed)
  • 120 milliliters whole milk
  • 60 grams unsalted butter, melted
  • 1 large egg
  • 2 tablespoons chopped green onions (optional)

Directions

Step 1

Preheat the oven to 375°F (190°C) and line a 12-cup muffin tin with paper liners or lightly grease it with cooking spray.

Step 2

In a large mixing bowl, whisk together the all-purpose flour, baking powder, baking soda, salt, and sugar.

Step 3

Add the crumbled bacon and shredded cheddar cheese to the dry ingredients, making sure they are evenly distributed.

Step 4

In a separate bowl, combine the sourdough starter discard, milk, melted butter, and egg. Whisk until smooth.

Step 5

Pour the wet ingredients into the dry ingredients and gently fold together using a spatula until just combined. Be careful not to overmix.

Step 6

If using green onions, fold them into the batter at this stage.

Step 7

Divide the batter evenly among the prepared muffin cups, filling each about three-quarters full.

Step 8

Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.

Step 9

Remove the muffins from the oven and allow them to cool in the pan for 5 minutes before transferring them to a wire rack to cool completely or serve warm.
