Ingredients

  • 120 grams Sourdough starter (discard or active)
  • 200 grams All-purpose flour
  • 50 grams Rolled oats
  • 100 grams Brown sugar
  • 50 grams Granulated sugar
  • 1.5 teaspoons Baking powder
  • 0.5 teaspoons Baking soda
  • 1 teaspoons Ground cinnamon
  • 0.25 teaspoons Ground nutmeg
  • 0.5 teaspoons Salt
  • 115 grams Unsalted butter, melted and slightly cooled
  • 2 large Eggs
  • 120 grams Plain yogurt or sour cream
  • 1 teaspoons Vanilla extract
  • 1 medium Apple, peeled, cored, and finely chopped
  • 50 grams Chopped nuts (walnuts or pecans, optional)

Directions

Step 1

Preheat your oven to 350°F (175°C). Grease and flour a standard 9x5-inch loaf pan or line it with parchment paper.

Step 2

In a large bowl, whisk together the all-purpose flour, oats, brown sugar, granulated sugar, baking powder, baking soda, cinnamon, nutmeg, and salt.

Step 3

In a separate medium bowl, combine the sourdough starter, melted butter, eggs, yogurt (or sour cream), and vanilla extract. Mix until smooth.

Step 4

Gradually add the wet ingredients to the dry ingredients, stirring gently with a spatula until just combined. Be careful not to overmix.

Step 5

Fold in the chopped apple and, if using, the chopped nuts. Make sure the add-ins are evenly distributed throughout the batter.

Step 6

Pour the batter into the prepared loaf pan, spreading it evenly and smoothing the top with a spatula.

Step 7

Bake in the preheated oven for 45-50 minutes, or until a toothpick inserted into the center of the bread comes out clean.

Step 8

Remove the bread from the oven and let it cool in the pan for about 10 minutes. Then transfer it to a wire rack to cool completely before slicing and serving.

Step 9

Store leftovers in an airtight container at room temperature for up to 3 days or refrigerate for up to a week. The flavors will deepen over time.
