Ingredients

  • 120 grams active sourdough starter (100% hydration)
  • 300 grams all-purpose flour
  • 50 grams whole wheat flour
  • 100 grams grated carrot
  • 100 grams grated apple
  • 30 grams brown sugar
  • 180 milliliters warm water
  • 8 grams salt
  • 1 teaspoon ground cinnamon
  • 0.25 teaspoon ground nutmeg
  • 50 grams chopped walnuts (optional)
  • 50 grams raisins (optional)

Directions

Step 1

In a large mixing bowl, combine the active sourdough starter, warm water, brown sugar, and ground cinnamon and nutmeg. Stir until well mixed.

Step 2

Add the all-purpose flour, whole wheat flour, and salt into the bowl with wet ingredients. Mix until a shaggy dough forms.

Step 3

Transfer the dough to a lightly floured surface and knead for about 8-10 minutes until the dough becomes smooth and elastic. Alternatively, you can mix in a stand mixer with a dough hook for 5-6 minutes.

Step 4

Gently fold in the grated carrot, grated apple, chopped walnuts, and raisins (if using). Knead for another 2-3 minutes until the additions are evenly distributed throughout the dough.

Step 5

Place the dough in a clean, lightly oiled bowl and cover with a damp towel or plastic wrap. Allow it to rest and rise at room temperature for 4-6 hours or until it nearly doubles in size.

Step 6

Lightly grease a 9x5-inch loaf pan or line it with parchment paper.

Step 7

Punch down the dough gently, shape it into a loaf, and transfer it to the prepared pan. Cover loosely with a towel and let the dough rise again for 1-2 hours until it puffs up slightly.

Step 8

Preheat your oven to 375°F (190°C) about 20 minutes before baking.

Step 9

Bake the bread in the preheated oven for 30-35 minutes, or until the crust is golden brown and the loaf sounds hollow when tapped on the bottom.

Step 10

Let the bread cool for at least 30 minutes before slicing. Enjoy warm or at room temperature!
