Ingredients

  • 4 cups All-purpose flour
  • 2 tablespoons Granulated sugar
  • 1.5 teaspoons Baking powder
  • 0.5 teaspoons Baking soda
  • 1 teaspoons Salt
  • 0.5 cups Unsalted butter, cold and cubed
  • 0.25 cups Vegetable shortening, cold and cubed
  • 1 cup Sourdough starter, unfed/discard
  • 0.5 cups Buttermilk, cold
  • 2 tablespoons Melted butter (for brushing)

Directions

Step 1

Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper or grease it lightly.

Step 2

In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt until evenly combined.

Step 3

Add the cold cubed butter and vegetable shortening to the dry ingredients. Use a pastry cutter or your fingertips to cut the fat into the flour mixture until it resembles coarse crumbs.

Step 4

In a separate bowl, mix the sourdough starter and cold buttermilk together until combined.

Step 5

Make a well in the center of the flour mixture and pour in the sourdough-buttermilk mixture. Stir gently with a wooden spoon or spatula until the dough just comes together. Be careful not to overmix.

Step 6

Turn the dough out onto a lightly floured surface and pat it into a thick rectangle about 1 inch thick. Fold the dough in half, turn it, and press it out again. Repeat this folding process 3-4 times to create layers.

Step 7

Using a floured biscuit cutter (about 2.5 inches in diameter), cut out your biscuits and place them on the prepared baking sheet, leaving a little space between each.

Step 8

Gather the scraps of dough, re-roll them gently, and cut out more biscuits until all the dough is used.

Step 9

Bake the biscuits in the preheated oven for 12-15 minutes, or until the tops are golden brown.

Step 10

Brush the hot biscuits with melted butter as soon as they come out of the oven for an extra touch of richness.

Step 11

Serve warm, and enjoy with butter, jam, or your favorite toppings.
