Ingredients

  • 2 cups All-purpose flour
  • 1 cup Brown sugar
  • 0.5 cup Unsalted butter
  • 1 teaspoon Baking soda
  • 1 teaspoon Ground cinnamon
  • 0.5 teaspoon Ground nutmeg
  • 0.25 teaspoon Salt
  • 2 large Eggs
  • 1 cup Sour milk (or buttermilk)
  • 1 teaspoon Vanilla extract
  • 0.5 cup Raisins (optional)

Directions

Step 1

Preheat your oven to 375°F (190°C). Line a muffin tin with paper liners or grease it well.

Step 2

In a large mixing bowl, sift together the all-purpose flour, baking soda, ground cinnamon, ground nutmeg, and salt.

Step 3

In a separate bowl, cream the butter and brown sugar together until light and fluffy.

Step 4

Beat in the eggs, one at a time, ensuring each is fully incorporated before adding the next. Stir in the vanilla extract.

Step 5

Add the dry ingredients to the wet mixture alternately with the sour milk (or buttermilk). Start with the dry ingredients, adding them in three parts, and the sour milk in two parts. Mix until just combined; do not overmix.

Step 6

If using raisins, gently fold them into the batter.

Step 7

Spoon the batter evenly into the prepared muffin tin, filling each cup about 2/3 full.

Step 8

Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center of a cake comes out clean.

Step 9

Remove the cakes from the oven and let them cool in the tin for 5 minutes, then transfer them to a wire rack to cool completely.

Step 10

Serve warm or at room temperature. These cakes pair wonderfully with a cup of coffee or tea.
